Indian Mozzarella: The Next Frontier in Dairy Innovation
India has long been a dairy powerhouse, holding the top spot in global milk production and contributing nearly a quarter of the world’s supply. This strong foundation makes India a promising destination for cheese, especially mozzarella, production.
The cheese market in India is booming. Valued at ₹71.3 billion in 2022, it is projected to reach ₹262.6 billion by 2028, driven by the rise of Quick Service Restaurants (QSRs), urban lifestyles, and growing interest in western cuisines. Consumers are also exploring artisanal and specialty cheeses. Yet, much of this demand for mozzarella is still met through imports, a clear opportunity for local manufacturing and innovation.
The Indian government is actively supporting this growth. Through the Production Linked Incentive Scheme for Food Processing Industry (PLISFPI), mozzarella has been identified as a key category for incentivised production encouraging companies to invest not just in capacity building, but also in export preparedness and brand development for global markets.
India’s dairy journey has always been powered by collaboration and innovation. From the White Revolution in 1970 that transformed India into the world’s largest milk producer, to today’s shift towards specialty cheeses, the same spirit of cooperation, craftsmanship, and culture is key.
This is where we come in. At Mondolat, we aim to bring our global expertise and technical know-how to India’s dairy sector. We look forward to partnering with local producers to enable the production of homegrown mozzarella- blending tradition, craftsmanship, and innovation at scale, while supporting end-to-end growth from production to branding.
Mozzarella could be the next milestone in India’s dairy journey, and we can help turn this potential into reality.
